Perfect Chili Recipe (Super Easy to Make)
Yesterday it snowed! It was only an inch or so, but in Texas, ANY snow is a big deal. The kids put on gloves and made tiny snowmen, traffic was a nightmare (even with no snow actually on the roads), and we snuggled up for a cozy night at home. I was in heaven!
For our family, a snow day means a roaring fire in the fireplace, cozy sweaters, and my mother-in-laws favorite chili recipe.
This recipe is easy to put together, never fails to warm us up, and tastes delicious over a layer of Fritos chips.
Mmmm….just writing about it makes me want to check the fridge for leftovers.

Perfect Snow Day Chili
- 2 lbs ground beef
- 1 chopped onion
- 2 large cloves garlic, chopped
- 2 16oz cans of tomato sauce
- 1/2 Tbsp. cumin
- 2 jalapeno peppers, seeds removed, chopped (we do 1 jalapeno b/c I don’t do too spicy)
- 2 Tbsp. Williams chili seasoning
- 1/2 Tbsp. black pepper
- 1 16 oz. can of ranch style beans
- 2-3 Tbsp. cornmeal
- Fritos (optional)
- Shredded cheddar cheese (optional)
Brown ground meat, onions and garlic together in a large pot. Drain all fat. Return to pot and add tomato sauce. Bring to a simmer. Add seasonings, peppers, and beans. Add cornmeal as needed to thicken. Serve over chips and top with cheese or sour cream.
This recipe can also be made in a crockpot. Just brown the beef, onions and garlic. Then transfer to crockpot with all other ingredients and cook on low for 4 hours.
Freezes well too!
